A to Z Quick Bread

Dry Ingredients:

3 cups all-purpose flour

1-3 teaspoons cinnamon

1 teaspoon salt

1 teaspoon baking soda

½ teaspoon baking powder

1 cup chopped nuts, or baking chips (ie: chocolate) optional*

Wet Ingredients:

3 eggs, beaten

2 cups sugar

1-3 teaspoons vanilla

1 cup oil of choice (or applesauce)

2 cups A-Z ingredients

A to Z ingredient options:

Remove excess moisture.

Use one or more. Get creative!

**Any "sauce" ie. apple, peach, pear can be used and dried fruit is an option too!**

Apples, chop or slice thin

Applesauce

Apricots, chopped

Bananas, fresh or thawed
frozen, mashed

Berries, whole, sliced, or dried

Carrots, grated

Cherries, whole or chopped

Cranberries, dry or fresh Dates, chopped

Eggplant

Figs, chopped

Grapes, chopped

Oranges, chopped

Peaches, chopped

Pears, chopped

Pineapple, chop or shredded

Plums, chopped

Pumpkin, puree

Raisins

Sweet Potato, cooked/mashed

Zucchini, shredded

Winter Squash, puree

  • Preheat oven to 325F.
  • Stir dry ingredients together in medium bowl.
  • Set aside.
  • In large bowl, beat eggs with sugar, by hand.
  • Add vanilla and oil to wet ingredients and stir.
  • Add A-Z ingredients, then add dry mixture to wet and stir just until mixed together.
  • Pour into 2 9x5 inch loaf pans and bake 50-60 minutes.
  • Insert knife into center and it should come out clean when done.
  • Allow to cool, almost completely, in the pan.
  • Remove from pan. May have to gently slide a knife around edges.
  • Slice when completely cool. If you can wait!


*If you are adding chopped nuts, reserve ½ cup of dry ingredients, toss nuts (or chips) in dry ingredients. Add coated nuts into complete mix and barely mix. This should prevent them from clumping together or settling in the bottom of the bread.*
